I have spent most of Fall making sure I get my fair share of Pumpkin…pumpkin spice lattes, pumpkin scones, pumpkin oatmeal…and now Pumpkin Chicken Chili!
This was perfect for football Sunday, and was a huge hit with my family!
In a crock-pot, add the following:
4 frozen chicken breasts
1 can Pumpkin puree
1 cup Salsa (I love Costco’s brand!)
2 cups Chicken stock
1/2 onion chopped
2 cans white beans
1 1/2 t Cumin
1T Chili powder
1t Garlic powder
Cook on low for 6 hours and enjoy with sour cream, cheese and fresh bread!
